· Take the stairs man. Yes, the stairs. We have been gifted lovely legs and I fully believe we should use them and not always rely on modern comforts such as escalators and elevators. Even just carrying your shopping up the stairs raises your heartbeat and gets the blood flowing wonderfully through your body.
• · Carry a bottle of water with you everywhere. This should help encourage you to drink water before any other options. Yes, I know water. If you are anything like me and can barely stand tap/still water, why not try a spring sparkling water? Slight flavour change and definitely a better experience on the tongue. •
· Need to pop over to your local corner shop? Take your re-usable bag and take a lovely stroll. Just that quick stroll in the fresh air will help you feel a little less stressed or even a little less frustrated. •
Using your body to do the things it was made for always causes such positive impact on the body and mind.
Do not forget we were not made to stay inside🌱
Another week, another veggie frittata👌🏼 this weeks combo is a mix of red bell pepper, lots of tomatoes & fresh basil🍅🌿🤘🏼 I’ve always been a fan of a good breakfast frittata, but recently I’ve been lovingg them extra😻 such an easy & delicious way to start the day! // to make: in a cast iron skillet, sauté one small red bell pepper in avocado oil with onion salt, rainbow peppercorns & red pepper flakes. when peppers start to soften, add 2-3 handfuls of chopped spinach, 1/4 cup sundried tomatoes & 1/4 cup chopped basil, removing from heat just as spinach starts to wilt. pour 8 whisked eggs over the mixture & cover the top completely with thinly sliced roma tomatoes + a pinch more sundried tomatoes. bake frittata @ 375 for 20-25 minutes until eggs are set & enjoy!!🍳

I cut an apple into tiny chunks and heated it with cinnamon and maple syrup until soft. I added these to dates, raisins, cashews and apricots that had been soaking in warm water for 10 mins and blended them together. To combine the mixture I added ground almonds until thick enough to form balls. I then coated one with desiccated coconut and raw cacao and then set in the fridge till set💁🏼♀️

How can we help this terrible cycle??

1. change your mindset about food. Try.. I’m eating this way bc it makes me feel good... or I could eat anything I want but I’m choosing not to today. That sounds better!! Also.. eat all food groups.. there are no foods on the naughty list.. just keep them clean and everything works out!
2. Realize why your binge eating.... is it emotional from stress?? Is it bc you are are feeling too hungry? Think about why.. then we can work on fixing it!
3. Don’t feel guilty over food.. it’s just that.. FOOD. It holds no power over us it’s fuel for our bodies.. end of story! It’s ok to treat yourself every once in a while!!! We are humans!

Sautéed cinnamon apples & pears with coconut butter drizzle... seriously heaven on earth!🤤🍎🍐 one of my favorite dishes to make for a healthy snack, dessert or breakfast that seriously smells & tastes like pie!🥧 // to make, i peeled & sliced two small apples + one pear using my #Deejo knife🔪 {also, how cute is this @deejo_knives design?!}, then heated 1-2 Tbsp of coconut oil in the cast iron. once melted, i added the sliced fruit & seasoned with a pinch of sea salt, stirring for 3-5 minutes until softened. then i lowered heat & sprinkled with cinnamon, stirring until well coated + lightly browned. finally, drizzle melted coconut butter🥥 over apples & pears to serve. Enjoy warm or you can serve leftovers chilled if preferred!

Leftover Quinoa Fried Rice 😋

INGREDIENTS
1 tablespoons sesame oil
1½ cups cooked quinoa
½ cup carrot, chopped
½ cup frozen edamame beans
2 garlic cloves, crushed
2 eggs
2 tablespoon soy sauce
Pepper, to taste
1 green onion, sliced

Optional
Sesame seeds
Additional green onion, sliced
.
INSTRUCTIONS
1. Heat sesame oil in a large pan over medium-high heat.
2. Add the quinoa to the pan and stir. Cook until the quinoa is hot.
3. Stir in carrots and edamame and heat through.
4. Push the quinoa mixture to the sides of the pan creating a hole in the center. Add garlic to the center and stir to lightly cook, then mix into the quinoa.
5. Make another hole in the quinoa and crack two eggs in the middle of the pan. Scramble them without mixing with the quinoa, then once eggs are cooked, mix together.
6. Stir in soy sauce, pepper, and green onion.
7. Garnish with sliced green onions and sesame seeds.
8. Enjoy! ❤

▶️INGREDIENTS
FOR THE CRISPY TOFU:
One batch of this Perfect Crispy Baked Tofu
FOR THE STIR FRY SAUCE:
1 teaspoon of sesame oil
2 tablespoons of rice vinegar
¼ cup of soy sauce
¼ cup of water/ broth
1 tablespoon of sriracha
2 tablespoons of maple syrup
1 tablespoon of cornstarch
FOR THE VEGGIE STIR FRY:**
2 tablespoons of sesame oil
1 heaping cup of Snow peas (basically a large handful)
1 cup of carrots, cut into matchsticks
1 red bell pepper, cut into thin strips
1 cup of purple cabbage, thinly sliced
1 medium head of broccoli cut into bite sized pieces
2 teaspoons of minced fresh ginger
3 cloves of garlic, minced
▶️INSTRUCTIONS
Make your crispy baked tofu.
In a large skillet, heat the sesame oil over medium heat. Once hot, add in the snow peas, carrot, bell pepper, cabbage, and broccoli. Cook until crisp tender, about 7 minutes. Continue to stir frequently.
While the veggies are cooking, make your sauce by whisking together the oil, rice vinegar, soy sauce, broth, sriracha, maple syrup, and cornstarch.
Once the veggies are crisp tender, toss in the baked tofu and the stir fry sauce. Continue to cook for 5 additional minutes until the sauce has thickened quite a bit and until the veggies are tender.
Serve with rice or quinoa (or whatever else floats your boat) and ENJOY!!

Here’s a healthy fudge recipe for anyone needing a chocolate fix this Valentine’s Day but looking to keep their macros in check❣️
Ingredients:
-2 scoops protein powder (I used @1stphorm Level-1 ice cream sandwich)
-1/4 cup pb
-1/4 cup coconut oil
-2 tbsp unsweetened cocoa powder
-2 tbsp pure maple syrup
Mix all of the ingredients together, place the mixture into a pan lined with parchment paper, and stick in the freezer for 30 minutes!
Macros for 1/12 of the recipe (without sprinkles): 5c/5p/8f

Frittata with goat cheese, broccoli and peas with quinoa

Serves 4

Nutrition Facts
Cal: 530

Ingredients:
7 oz broccoli florets
1 tbsp olive oil
8 eggs
¼ cup parsley
1 tbsp Dijon mustard
5 oz goat cheese
½ cup nonfat milk
2 cups frozen peas, thawed
2 cups cooked quinoa
2 spring onions, sliced
salt, black pepper, to taste

Directions:
1. Preheat oven to 425°F.
2. Place the broccoli in a baking pan. Drizzle with olive oil, season with salt and black pepper to taste, and toss to coat.
3. Bake for 5 minutes.
4. In a bowl place the eggs, milk, parsley, mustard and season to taste with salt and black pepper.
5. Mix to combine.
6. Stir in the peas and half of goat cheese.
7. Remove the pan from the oven and pour the egg mixture over broccoli.
8. Bake for 35-40 minutes or until frittata is set.
9. Remove from the oven and let cool slightly.
10. Cut in 4 pieces. Divide the cooked quinoa and frittata between 4 food containers.
11. Sprinkle with the remaining goat cheese and spring onions.
12. Serve immediately or store in refrigerator for up to 4 days.

12 Minute Couscous chickpea Salad | 4 – 5 as meal, 8 – 10 as side

1 1/4 cups dried couscous
1 1/4 cups / 315 ml boiled water
1 tsp vegetable stock powder (or 1 cube crumbled)
1 garlic clove , minced
1 tsp coriander powder (or cumin - I interchange)
400 g / 14 oz chickpeas (1 can) , drained
1/2 cup EACH coriander and parsley (or mint), finely chopped
1 red onion , chopped
220 g / 7 oz jar sun dried tomato strips in OIL
120 g / 4 oz rocket / arugula lettuce , chopped into 5 cm / 2" pieces
Zest of 1 large lemon + 5 tbsp fresh lemon juice (2 large lemons)
1/2 tsp coarsely ground black pepper
60 g / 2 oz feta , crumbled
Salt and pepper , to taste

1. Place chickpeas, couscous, vegetable stock powder, coriander and garlic in a large bowl. 2. Pour over hot water, shake to level out. Cover with plate or cling wrap, set aside for 5 min.
3. Fluff couscous with fork. Cool a bit.
4. Add coriander, parsley, onion, sun dried tomatoes (including all oil), rocket, lemon juice and black pepper. Sprinkle zest across surface. Toss well to combine.
5. Adjust salt and pepper to taste. Sprinkle with feta. Serve. .

If you just workout and change your nutrition then you will lose weight....but TRUST me when I tell you, I lost 40+ lbs and I left like the same “fat” girl I was before. Why??? Bc I didn’t do any personal development! I didn’t take the time to work on me confidence! I just wanted to get “THERE” meaning to that goal weight. When I reached it I felt so lost.. why wasn’t I happy... why wasn’t I confident? 🙌🏻
I now learned to take the time.. listen to podcast.. wrote in my journal.. read a book. This is a journey.. with your body.. and mind!! Take the time to enjoy yourself now... you will appreciate the transformation more later!! 🙌🏻

Been on a kabocha squash kick lately! it’s a Japanese variety of winter squash that sorta tastes like a mix between pumpkin & sweet potato🙌🏼🎃🍠 i like it best roasted in the oven until slightly crispy on the outside & soft on the inside👌🏼 just cut the squash in half, scoop out the seeds & slice into cubes or wedges. toss in olive oil or avocado oil + sea salt & pepper and roast in the oven @ 400 for 30-40 minutes, flipping halfway through // paired for breakfast this morning with two organic scrambled eggs + sautéed red bell pepper + avocado + taco seasoning. Happy Saturday!

3. If a package is overselling how healthy it is.. it’s probably not. You don’t see a huge HEALTHY FOR YOU sign on broccoli... right!!

Just that quick stroll in the fresh air will help you feel a little less stressed or even a little less frustrated. • Using your body to do the things it was made for always causes such positive impact on the body and mind. Another week, another veggie frittata👌🏼 this weeks combo is a mix of red bell pepper, lots of tomatoes & fresh basil🍅🌿🤘🏼 I’ve always been a fan of a good breakfast frittata, but recently I’ve been lovingg them extra😻 such an easy & delicious way to start the day! // to make: in a cast iron skillet, sauté one small red bell pepper in avocado oil with onion salt, rainbow peppercorns & red pepper flakes. when peppers start to soften, add 2-3 handfuls of chopped spinach, 1/4 cup sundried tomatoes & 1/4 cup chopped basil, removing from heat just as spinach starts to wilt. pour 8 whisked eggs over the mixture & cover the top completely with thinly sliced roma tomatoes + a pinch more sundried tomatoes. bake frittata @ 375 for 20-25 minutes until eggs are set & enjoy!!🍳
Cinnamon apple date balls🤤. - These are so easy to do and you can pretty much make up your own recipe each time!. - I cut an apple into tiny chunks and heated it with cinnamon and maple syrup until soft. I added these to dates, raisins, cashews and apricots that had been soaking in warm water for 10 mins and blended them together. To combine the mixture I added ground almonds until thick enough to form balls. I then coated one with desiccated coconut and raw cacao and then set in the fridge till set💁🏼♀️

Then after time you feel too restricted and hate the “diet”. Then sneaks in the evil feeling of feeling deprived.. I wish I could have_____!!!I’m not allowed to eat _____!!!! Then you binge eat and then you feel bad about it and quit .. sound familiar?? . How can we help this terrible cycle?? . 1. change your mindset about food. Try.. I’m eating this way bc it makes me feel good... or I could eat anything I want but I’m choosing not to today. That sounds better!! Also.. eat all food groups.. there are no foods on the naughty list.. just keep them clean and everything works out! 2. Realize why your binge eating.... is it emotional from stress?? Is it bc you are are feeling too hungry? Think about why.. then we can work on fixing it! 3. Don’t feel guilty over food.. it’s just that.. FOOD. In a large skillet, heat the sesame oil over medium heat. Once hot, add in the snow peas, carrot, bell pepper, cabbage, and broccoli. Cook until crisp tender, about 7 minutes. Continue to stir frequently. While the veggies are cooking, make your sauce by whisking together the oil, rice vinegar, soy sauce, broth, sriracha, maple syrup, and cornstarch. Once the veggies are crisp tender, toss in the baked tofu and the stir fry sauce. Continue to cook for 5 additional minutes until the sauce has thickened quite a bit and until the veggies are tender. Serves 4 - Nutrition Facts Cal: 530 P: 30g F: 24g C: 30g - Ingredients: 7 oz broccoli florets 1 tbsp olive oil 8 eggs ¼ cup parsley 1 tbsp Dijon mustard 5 oz goat cheese ½ cup nonfat milk 2 cups frozen peas, thawed 2 cups cooked quinoa 2 spring onions, sliced salt, black pepper, to taste - Directions: 1. Preheat oven to 425°F. 2. Place the broccoli in a baking pan. Drizzle with olive oil, season with salt and black pepper to taste, and toss to coat. 3. Bake for 5 minutes. 4. In a bowl place the eggs, milk, parsley, mustard and season to taste with salt and black pepper. 5. Mix to combine. 6. Stir in the peas and half of goat cheese. 7. Remove the pan from the oven and pour the egg mixture over broccoli. 8. Bake for 35-40 minutes or until frittata is set. 9. Remove from the oven and let cool slightly. 10. Cut in 4 pieces. My mind and nutrition are a HUGE part of my transformation! 🙌🏻 If you just workout and change your nutrition then you will lose weight....but TRUST me when I tell you, I lost 40+ lbs and I left like the same “fat” girl I was before. Why??? Bc I didn’t do any personal development! I didn’t take the time to work on me confidence! I just wanted to get “THERE” meaning to that goal weight. When I reached it I felt so lost.. why wasn’t I happy... why wasn’t I confident? 🙌🏻 I now learned to take the time.. listen to podcast.. wrote in my journal.. read a book. Heat olive oil cast iron skillet over medium heat. Add the onions and fresh thyme and peppers and cook for about 10 minutes until the onions become soft and translucent. 2. Add chopped carrots, green pepper and green string beans and steam for 10 minutes 3. Pour blended fresh tomatoes, and add seasoning for taste. Bring to a boil, then add the cooked beef and chicken sausage to the mixture. 4. Been on a kabocha squash kick lately! it’s a Japanese variety of winter squash that sorta tastes like a mix between pumpkin & sweet potato🙌🏼🎃🍠 i like it best roasted in the oven until slightly crispy on the outside & soft on the inside👌🏼 just cut the squash in half, scoop out the seeds & slice into cubes or wedges. toss in olive oil or avocado oil + sea salt & pepper and roast in the oven @ 400 for 30-40 minutes, flipping halfway through // paired for breakfast this morning with two organic scrambled eggs + sautéed red bell pepper + avocado + taco seasoning.
