The only grouse I've ever eaten is ruffed grouse. I was told spruce grouse taste like s**t by some people, or that they taste "strong" by other people. So I didn't have high hopes that they'd be that great. But too be honest I think I liked them better. The dark meat seemed to hold moisture better and I thought it tasted almost identical to deer heart. I cooked it on low heat in butter and made sure I didnt overcook it. It was delicious and I want some more!
